Preparation Steps
- Carefully remove the stems from the zucchini flowers without tearing. Soak in cold water for 1–2 minutes, then pat dry.
- Preheat your oven to 150°C (300°F).
- Heat 4 tablespoons of olive oil in a large pan over medium heat. Sauté the chopped white onion until caramelized, about 10 minutes.
- Add spring onion and minced garlic, cooking for an additional 2 minutes. Stir in long-grain rice, sauté for a minute, then mix in grated zucchini and tomato until heated through.
- Remove from heat, fold in fresh herbs, lemon zest, and lemon juice, seasoning to taste.
- Gently fill each zucchini flower with the rice mixture, securing the ends by twisting.
- Drizzle remaining olive oil and lemon juice over the stuffed flowers. Pour ½ cup of water or vegetable stock into the baking dish.
- Cover the dish with foil and bake for 1.5 hours. Uncover and bake for another 10 minutes until golden.
- Let the stuffed zucchini flowers rest for 30 minutes before serving.
