Ingredients
  

For the Chicken
  • 2 pieces Boneless Skinless Chicken Breasts
  • 1/4 cup Extra Virgin Olive Oil For marinade and grilling
  • 2 tablespoons Honey
  • 1 tablespoon Fresh Lime Juice Can substitute with lemon juice
  • 2 cloves Garlic Minced
  • 1 handful Fresh Cilantro Can substitute with parsley or mint
For the Salad
  • 2 pieces Peaches Select slightly less ripe ones
  • 2 ears Corn Fresh corn on the cob
  • 5 cups Mixed Greens Spinach/arugula or any leafy greens
  • 1 handful Fresh Basil Can be omitted or replaced by mint
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. In a medium bowl, whisk together ¼ cup of extra virgin olive oil, 2 tablespoons of honey, the juice of 1 fresh lime, a handful of chopped cilantro, and 2 minced garlic cloves.
  2. Place 2 boneless, skinless chicken breasts in a shallow dish and pour the remaining marinade over them.
  3. Preheat your grill to medium-high heat, about 375°F to 400°F.
  4. Grill the marinated chicken for about 6 to 7 minutes per side until the internal temperature reaches 165°F.
  5. Add the corn and peach halves during the last 8 minutes of cooking.
  6. Remove the chicken, corn, and peaches from the grill and let them cool slightly.
  7. In a large bowl, combine mixed greens, diced grilled peaches, and corn.
  8. Drizzle the reserved honey lime dressing over the salad mixture and toss gently.
  9. Slice the grilled chicken into strips and arrange it on top of the salad.
  10. Serve immediately and enjoy!
