- In a medium bowl, whisk together ¼ cup of extra virgin olive oil, 2 tablespoons of honey, the juice of 1 fresh lime, a handful of chopped cilantro, and 2 minced garlic cloves.
- Place 2 boneless, skinless chicken breasts in a shallow dish and pour the remaining marinade over them.
- Preheat your grill to medium-high heat, about 375°F to 400°F.
- Grill the marinated chicken for about 6 to 7 minutes per side until the internal temperature reaches 165°F.
- Add the corn and peach halves during the last 8 minutes of cooking.
- Remove the chicken, corn, and peaches from the grill and let them cool slightly.
- In a large bowl, combine mixed greens, diced grilled peaches, and corn.
- Drizzle the reserved honey lime dressing over the salad mixture and toss gently.
