- Gather all ingredients and preheat your skillet over medium heat.
- Cook crispy bacon in the skillet until browned and crisp, about 3-4 minutes per side. Transfer to a paper towel-lined plate.
- Prepare pesto if making homemade. Blend fresh basil, garlic, pine nuts, Parmesan, and olive oil until smooth.
- Spread pesto on one side of each slice of bread. On the unpasted side, layer cheese, bacon, and sun-dried tomatoes, then more cheese, and close the sandwich.
- Grill the sandwich in the skillet for 4-6 minutes until golden brown and the cheese melts.
