Step-by-Step Instructions
  1. Gather all ingredients and preheat your skillet over medium heat.
  2. Cook crispy bacon in the skillet until browned and crisp, about 3-4 minutes per side. Transfer to a paper towel-lined plate.
  3. Prepare pesto if making homemade. Blend fresh basil, garlic, pine nuts, Parmesan, and olive oil until smooth.
  4. Spread pesto on one side of each slice of bread. On the unpasted side, layer cheese, bacon, and sun-dried tomatoes, then more cheese, and close the sandwich.
  5. Grill the sandwich in the skillet for 4-6 minutes until golden brown and the cheese melts.
  6. Flip the sandwich and grill the other side for another 4-6 minutes.
  7. Remove from skillet, let rest for a minute, then slice in half and serve immediately.
