Cooking Instructions
  1. Prepare Tofu: Mash the extra firm tofu on a plate with a fork, leaving larger chunks for texture. This takes about 2–3 minutes.
  2. Mix Sauces: In a bowl, combine nutritional yeast, turmeric, paprika, Dijon mustard, garlic powder, black salt, onion powder, and soy milk. Whisk until smooth and vibrant yellow.
  3. Cook Tofu: Heat a non-stick frying pan over medium heat with vegan butter. Add the tofu and cook for 5–7 minutes, stirring occasionally until golden brown.
  4. Combine Sauces: Reduce heat and fold in the sauce mixture. Cook for an additional 3–5 minutes until fully incorporated.
  5. Serve: Plate the scramble, topping with cracked black pepper and chives. Enjoy with fried tomatoes and sliced avocado.
