- Rinse 1 cup of jasmine or brown rice under cold water. In a medium saucepan, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until tender. Fluff with a fork.
- In a large skillet over medium-high heat, cook 1 pound of ground beef or turkey for 5-7 minutes until browned. If using beans or tofu, sauté for 4-5 minutes. Drain excess fat.
- Sprinkle taco spices over the cooked protein, mix well, pour in 1/3 cup of water, and let it simmer for 2-3 minutes.
- Prepare toppings by dicing tomatoes, shredding lettuce, and slicing onions. Rinse black beans. Set aside in small bowls.
- In a large serving bowl, layer with fluffed rice, seasoned protein, and prepared toppings.
