Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, whisk together soy sauce, lemon juice, honey, sesame oil, rice wine vinegar, and red pepper flakes until combined. Add chicken and marinate for at least 10 minutes.
  2. Heat a wok or skillet over high heat, add half of the avocado or olive oil. Drain marinated chicken and add to hot pan, cooking for about 5 minutes until golden brown.
  3. In the same pan, add remaining oil and minced garlic. Sauté for 30 seconds then add carrots, bell peppers, snow peas, and mushrooms. Stir-fry for about 3 minutes.
  4. Return the cooked chicken to the pan, then add defrosted broccoli and stir gently to combine. Cook for another 2 minutes.
  5. Whisk together cornstarch with a bit of reserved marinade until smooth. Pour into the pan, stirring constantly, and cook for about 5 minutes until sauce thickens.
  6. Serve over rice or noodles, topped with green onions and sesame seeds. Adjust seasoning if desired.
