  • 4 fillets Tilapia Fresh or frozen, thawed
For the Sauce
  • 2 cups Roasted Red Peppers Jarred or homemade
  • 3 cloves Garlic Fresh
  • 2 tablespoons Olive Oil Extra virgin recommended
  • 2 tablespoons Fresh Herbs Basil or parsley, finely chopped
  • 1 tablespoon Lemon Juice
  • 1 cup Chicken Broth Low-sodium preferred
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a medium-sized baking dish.
  2. Blend roasted red peppers, garlic, olive oil, lemon juice, salt, and pepper until smooth in a blender.
  3. Pour half of the sauce into the greased baking dish, place tilapia fillets on top, and coat with remaining sauce.
  4. Bake the tilapia for 20–25 minutes until it flakes easily with a fork.
  5. Garnish with fresh herbs before serving.
