Preparation Steps
  1. Thoroughly wash and scrub the Yukon Gold or red-skinned potatoes under cold running water.
  2. Place them in a pot filled with cold water, adding a pinch of salt.
  3. Bring the pot to a boil over medium-high heat, then reduce the heat and let the potatoes simmer gently for about 15-20 minutes.
  4. While the potatoes are cooking, whisk together the olive oil, lemon juice, sumac, salt, and pepper in a small bowl.
  5. Once the potatoes are cooked, drain them and allow them to cool slightly before cutting them into bite-sized cubes.
