Ingredients
  

For the Massaman Paste
  • 1 jar Massaman Paste homemade is fresher but store-bought is convenient
  • 3 cloves garlic peeled
  • 1 tsp minced fresh ginger
  • 2 sticks lemongrass can substitute with lemongrass paste
  • 3 pcs mild red chillies adjust for heat
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp white pepper
  • 1 tsp shrimp paste optional
For the Curry
  • 1 kg braising beef uses beef chuck or similar cuts
  • 2 tbsp vegetable oil
  • 1 pcs red onion chopped
  • tbsp cornflour (cornstarch)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 400 ml beef stock ensure gluten-free if necessary
  • 400 g canned coconut milk
  • 500 g baby new potatoes halve if large
  • 1 tsp fish sauce choose gluten-free
  • 1 tsp brown sugar
  • 1 pcs lime juice of
  • ½ tsp salt
  • 1 bunch fresh coriander stalks for cooking, leaves for garnish
To Serve
  • 2 cups steamed rice
  • 1 bunch chopped fresh coriander for garnish
  • 1 pcs chopped red chillies for those who want more heat
  • 1 pcs lime wedges for serving

Method
 

Step-by-Step Instructions
  1. Blend all the ingredients for the Massaman paste in a food processor until smooth.
  2. Toss the braising beef with cornflour, salt, and pepper. Let sit for 10 minutes.
  3. Heat vegetable oil in a pan and sear the beef until browned on all sides.
  4. Add the Massaman paste to the pan and sauté for 2-3 minutes.
  5. Pour the beef stock and coconut milk into the pan, stirring to combine. Return seared beef and simmer for 1 hour 45 minutes.
  6. Add halved baby potatoes to the curry and cook for an additional 25-30 minutes.
  7. Stir in fresh lime juice before serving over steamed rice with garnishes.
