For the Dressing
  • 1/2 cup Mayonnaise Light mayonnaise can be used for health benefits.
  • 1/2 cup Sour Cream Greek yogurt can be substituted for a lighter option.
  • 3 tbsp Lime Juice Use fresh lime juice for optimal flavor.
  • 1 tsp Chili Powder Paprika or taco seasoning can be used for variation.
  • 1 tsp Garlic Powder Fresh minced garlic can enhance the flavor.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to package instructions, approximately 8–10 minutes, until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled rotini pasta with corn, cherry tomatoes, red onion, feta cheese, and cilantro. Gently toss until well mixed.
  3. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt and pepper to taste until smooth.
  4. Pour the dressing over the pasta mixture. Gently toss until the pasta and vegetables are evenly coated.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
