Step-by-Step Instructions for Taco Rice Bowl
- Rinse 1 cup of uncooked white rice under cold water until the water runs clear. Combine the rinsed rice with 2 cups of water or chicken broth and a pinch of salt in a medium pot. Bring to a boil over medium-high heat, then reduce heat to low, cover, and cook for 18-20 minutes until fluffy.
- Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Add 1 pound of ground beef or turkey, breaking it apart. Cook for 6-8 minutes until the meat is fully browned.
- Sprinkle in 1 packet of taco seasoning (approximately 1 oz) over the browned meat and stir well. Add a splash of water if too dry. Simmer on low heat for another 3-5 minutes.
- In a small saucepan, add 1 can of drained and rinsed black beans and 1 cup of corn. Heat over medium heat for about 5 minutes until warmed through.
- Remove cooked rice from heat and fluff with a fork. In serving bowls, layer the rice with seasoned ground meat, black beans, and corn.
- Top each bowl with 1 cup of shredded lettuce, 1 cup of diced tomatoes, and 1 cup of shredded cheddar cheese. Optionally add avocado slices, fresh cilantro, and a squeeze of lime.
