Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add one small diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in 3 minced garlic cloves and sauté for another 1-2 minutes until fragrant but not brown.
  3. In a medium bowl, whisk together soy sauce, maple syrup, rice vinegar, and sesame oil. Set aside.
  4. Pour prepared sauce into the skillet with onion and garlic, stirring well. Cook for about 2 minutes until simmering.
  5. Mix cornstarch with water to create a slurry. Add this to the skillet while stirring continuously. Cook for 1-2 minutes until thickened.
  6. Add 2 cups of cooked chickpeas to the skillet and toss until evenly coated. Simmer for 5-7 minutes until heated.
  7. Remove from heat, sprinkle with sesame seeds and garnish with sliced green onions. Adjust salt and pepper to taste.
  8. Serve over cooked rice or quinoa, alongside steamed or roasted vegetables.
