Preparation
- Preheat your oven to 400°F (200°C).
- Wash the beets thoroughly, trim tops, wrap in foil, and place on a baking sheet.
- Roast the wrapped beets in the oven for 45-60 minutes until tender.
- Cool slightly, then unwrap and peel off the skins.
- Slice the ends off the oranges and remove the peel, then cut them into segments.
- Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper in a bowl.
- On a large platter, layer the beet slices, orange segments, and red onion. Top with feta and walnuts.
- Drizzle dressing generously over the salad and garnish with fresh herbs if desired.
