  • 1 cup Pineapple Ripe, diced
  • 1 large Cucumber Sliced thin or in half moons
  • 1/4 cup Red Onion Finely sliced
For the Dressing
  • 1 teaspoon Chili Powder Adjust according to heat preference
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 tablespoon Honey or Maple Syrup For sweetness; agave as vegan option
  • 1/4 teaspoon Salt Sea salt or kosher salt
Optional Garnish
  • 2 tablespoons Fresh Cilantro or Mint Chopped

Method
 

Preparation
  1. Wash all ingredients thoroughly. Dice pineapple and slice cucumber and red onion.
  2. In a large mixing bowl, combine diced pineapple, cucumber, and sliced red onion.
Dressing Preparation
  1. In a small bowl, whisk together chili powder, lime juice, honey or maple syrup, and salt until smooth.
Combine
  1. Pour the dressing over the salad and gently toss until evenly coated.
Marination
  1. Let the salad sit for 10 to 15 minutes to allow flavors to meld.
Serve
  1. Serve in a shallow bowl and garnish with cilantro or mint.
